Food Friday- Corn Casserole

Today, I've got a special recipe straight from my grandma's kitchen.  My mom made corn casserole when I was growing up and it's always been one of my favorite dishes.  In case you can't read my grandma's writing above (this recipe was obviously used a lot!), here's what you'll need...
1 stick of butter (melted)
2 eggs
1 cup sour cream
2 tbsp grated onion (optional- I omit)
1 box Jiffy brand cornbread mix
1 can whole kernel corn (drained)  
1 can cream style corn
 

First, get a large microwavable bowl and melt your butter in it.  Turn your oven on 350 degrees to pre-heat.  Next, beat the eggs into the butter.  Add the sour cream and mix.  Then add the 2 cans of corn.  Lastly, add your Jiffy (here's a picture of it so you know what to look for in the store!  Am I a dork that I love this brand because the box looks retro?  Probably.).
Next, pour your mixture into a greased 9x13 pan.  Put it in the oven for about 60 minutes or until the edges turn a light golden color.  Cut into square and eat!  This gets even better with age, so you'll actually want to eat it as leftovers the next day.
